In the kitchen; simple and healthy tuna salad

Along with roughly half the population, my resolution to live a more healthful lifestyle, well, fell off approximately 21 days ago.. However, when one falls, she must pick herself up! In that spirit, I created a salad topped with healthy tuna. While many delicious things are not good for you, many good for you things are, in fact, delicious. Read more for the recipe!





Ingredients:
2 handfuls of greens of your choice{kale, spinach, and baby romaine all make for a delicious combination}
handful of sprouts
1 to 2 cans of tuna {in olive oil}
lemon juice
greek yogurt
1 lemon for zest and garnish
black olives
salt
pepper
italian seasonings
parsley {fresh preferred}
chives or onion greens

Instructions:
Chop olives and parsley. Zest half a lemon. Slice lemon
Open tuna and pour the contents {tuna and olive oil} into a bowl 
Add zest and seasonings to greek yogurt. Mix into tuna
Place greens and sprouts on plate. Dress with lemon juice
Add tuna mixture to plate
Garnish wiht parsley, chives, and black olives

Yum this sounds really good! I might have to give this a try myself. Haha yeah I kinda fell off the wagon too, too many chocolates. Hoping to rectify that over the next few days :) No time like the present!
